There are whiskies that mark a moment - and then there are whiskies that define them. The Dalmore Aged 17 Years is one such creation: a decadent evolution of our signature house style of orange, chocolate and soft spices, made for those who seek depth, complexity, and indulgence.
Designed by our whisky makers to push boundaries, this Highland Single Malt is the first new expression to join our Principal Collection since 2022, and having been matured for 17 years, is the oldest to showcase the enriching influence of three exclusive Sherry casks - Amoroso, Apostoles, and Matusalem Oloroso.
Born by design
The Dalmore Aged 17 Years begins its journey in our unique stillhouse in the Highlands, on the shores of the Cromarty Firth. Here, every curve of our famously idiosyncratic stills, each with a unique shape and size, has been designed with purpose to produce a rich depth of new-make spirit.
With bright, prominent notes of citrus and malt, our spirit is perfectly suited to long, complex maturation as it is transferred between rare casks to develop deep, rich layers of flavour.
Rare cask trilogy
The initial stage of the maturation journey is completed in American white oak ex-Bourbon barrels, which work to impart a base of soft vanilla and honey flavour notes.
This precious liquid is then finished in a rare trilogy of Oloroso Sherry casks: Amoroso, Apostoles, and Matusalem; each celebrated for its age and rarity, and carefully selected from world-renowned bodega González Byass, our exclusive Sherry cask partner for over one hundred years.
Under the watchful eye of our Whisky Makers, the spirit matures patiently, allowing time and wood to work their magic. Each Sherry cask, a partner in creation, is highly prized for its ‘flavour-giving’ qualities that gift the whisky with layers of richness and nuance, creating a profile that is velvet-like and full-bodied.
The Matusalem cask brings depth, layering dark marmalade with notes of chocolate and dried fruit while anchoring the finish and contributing a lingering richness. The Apostoles cask has a contrasting role, imparting brightness, shape and structure to the whisky while offering notes of walnut, toasted almond and freshly baked brioche.
Finally, the richness of Matusalem and the structure of Apostoles are brought into balance by the Amoroso cask, as it weaves harmony between dry and sweet, adding notes of caramel, toasted nuts and subtle spice.
Together, this trilogy of casks creates a Single Malt whisky that explores the depth of Sherry cask maturation, layering decadent flavours that marry together seamlessly with The Dalmore house style.

A new addition to The Dalmore portfolio, The Dalmore Aged 17 Years defines and embodies the art of rich Sherry multi-cask maturation – an enduring philosophy at the heart of The Dalmore distillery since 1868 – resulting in a masterpiece with a deeper complexity of flavour.
The aroma opens with Seville oranges, rich orchard fruit, and wood spice. On the palate, flavour notes of poached pears, forest berries, sweet toffee, and orange marmalade unfold, before a lingering finish of dark chocolate orange, rich dried fruit and hints of cinnamon and nutmeg.
