Bringing together rare Sherry cask maturation and Spanish culinary artistry, the occasion explored The Dalmore Aged 17 Years through exceptional food pairings while embracing the spirit of ‘sobremesa’ - the Spanish tradition of lingering at the table in conversation.
Introducing The Dalmore Aged 17 Years
Arriving at Sabor, guests were welcomed with a refreshing Highball cocktail made with The Dalmore Aged 12 Years - a bright and elegant introduction to The Dalmore house style with signature notes of chocolate, orange and soft spice.
Next, guests were invited to nose the three types of Sherry, helping them to identify the nuances and character that these casks bring to the whisky.
Finally, it was time for a tasting of The Dalmore Aged 17 Years itself. Guests discovered aromas of Seville orange, rich orchard fruit and wood spice. On the palate, poached pears, forest berries, and orange marmalade notes unfold into a long finish of dark chocolate orange, rich dried fruits and lingering hints of cinnamon and nutmeg.
A journey through flavour
Created by Bilbao-born Chef Director Nieves Barragán Mohacho, an exceptional menu of Spanish cuisine was served in the sharing style of traditional tapas.
The dishes, specialities from the Galicia and Castile regions, included Cañarejal cheese with The Dalmore-infused brioche, black trompette croquetas, diver-caught scallops and Segovian suckling pig.
As a finale, guests enjoyed strawberry tartaleta with liquorice sauce, pomegranate molasses ice cream and turrón mousse, while Nieves regaled with rich detail of the regions’ terroir and the provenance of the ingredients.
Through a further tasting, guests were invited to revisit the flavours of The Dalmore Aged 17 years to discover how the flavour notes evolved alongside each dish, highlighting the influence the three distinct Sherry casks have in the maturation.
To round off the experience, each guest was presented with a bottle of The Dalmore Aged 17 Years to open and enjoy at home with friends and loved ones – enriching those after dinner moments shared in conversation. The Dalmore Aged 17 Years is available to purchase on our online boutique.
